| Mini Apple Tarts |
Ingredients
17 3” Tart Shells
5 Cups Granny Smith apples
1.5 Cups Brown sugar
1 Tsp All Purpose Flour
Pinch Kosher salt
Pinch Cloves, Ground
1 Tsp Cinnamon, Ground
2 Tbsp. Butter, softened
Directions
Peel and small dice apples (place a large bowl). In a small bowl mix with a fork the sugar, flour, salt, cloves, cinnamon and butter until well blended.
Sprinkle mixture over apples and toss until the apples are well coated.
Take 5 tart shells, roll into one ball, then roll out flat, & cut into ¼ inch thick strips.
Put apple mixture into 12 Tart Shells, & cover with 4-6 pieces of the crust strips.
Gently press edges together.
Sprinkle white sugar on top.
Bake in a 325’C oven for about 20- 25 minutes, or until crust is golden brown

Buttermilk Cheddar Biscuits
Makes 8 biscuits |
Ingredients
1 3/4 cups all-purpose flour
3/4 cup fine ground cornmeal
4 teaspoons baking powder
1 teaspoon baking soda
2 teaspoon Kosher salt
1/2 stick (1/4 cup) cold unsalted butter, cut into 1/2-inch cubes
5 oz Meduim Cheddar, coarsely grated
3 tablespoons finely grated Asiago cheese
2 Green Onions, finely chopped
1 1/3 cups well-shaken buttermilk
Directions
1. Preheat oven to 400°F. Butter 1 large baking sheet.
2. Whisk together flour, cornmeal, baking powder, baking soda, and salt in a bowl, then blend in butter with your hands. Stir in cheeses and scallions with a wooden spoon, then add buttermilk and stir until just combined. Cover & Let mixture rest at room temp for 5 min.
3. Cut dough into 8 equal portions about 2 inches apart on a greased baking sheet. Bake until golden, for about 15-20 minutes. Transfer to a rack and cool to warm, then cut & serve.

Chocolate Chip Oatmeal Pecan Cookies

Ingredients
1 Cup of Butter
1 Cup of White Sugar
1 Cup of Brown Sugar
2 whole eggs
1 Tsp Vanilla extract
2 Cups All purpose Flour
3 Cups Oatmeal
1 pinch Salt
1 Tsp Baking Powder
1 Tsp Baking Soda
2 Cups Chocolate Chips
1 Cup of pecan pieces
Directions
Cream together Butter, & Sugars, then add eggs & vanilla.
Mix all Dry ingredients together, then add butter sugar mixture & chill
Bake on ungreased pan, roll into small 1oz sized balls about 2” apart.
Bake at 350’F for 5 min, and Flatten with a spatula, finish baking for 5 min.

Ingredients
250 gr. Flour, All purpose
250 gr. Flour, Corn Meal
75 gr. Sugar, Brown
20 gr. Baking powder
35 gr. Salt, Kosher
375 ml Eggs, whole Fresh
250 ml Corn, Creamed
1/3 cup Buttermilk
2oz Butter, salted
1 oz Olive Oil
1 oz Peppers, Red Thai chili or Jalapeno, Minced
200 ml Coconut milk
4 oz Cheese, old Cheddar, shredded
Directions
1 - Mix all dry ingredients together, then add all wet ingredients, mix well
2 - Pour into a bread pan lined with parchment paper, & bake at 325' for 45 hour.

| South Fried Chicken |
Ingredients
2 Tablespoons Chili Powder
1 Tablespoon Ground Oregano
1 Tablespoon Ground Thyme
2 Teaspoons Ground Rosemary
1 Teaspoon Garlic Powder
½ Teaspoon Salt
1 Teaspoon Cayenne Pepper
2 teaspoons Ground Ginger
1 Teaspoon Ground Black Pepper
1 Teaspoon Ground Sage
1 Tablespoon Paprika
1 Cup Bread Crumbs
Directions
Combine all ingredients in a small bowl and blend well. Spoon mixture into a small airtight container and label as Chicken Coating Mix. Store in a cool dry place and use within 6 months.
Makes about 1/2 Cup of mix |
